  • Closing on summer. The last few weeks were the best. Filled with gatherings, love, food, beach, and lots of memories. That being said I'm happy to say goodbye because fall is my wheelhouse.   • Harvested the last of my garden tomatoes and made my  smokey roasted tomato marina today.  Roasting the tomatoes eliminates the need to use tomato paste in the recipe, which is good because I don't care for the flavour of tomato paste - and it gives a nice smokey depth. I struggle with using exact measurements. I'm a little of this and a little of that type of cook but I did write it down today to share with you. Keep in mind you can add whatever seasoning you like - basil, thyme. I just had fresh Rosemary on hand and it works well for this sauce. •4 cups of tomatoes quartered
• 6 cloves of garlic • 1 large onion diced small
• 1 tsp sugar - cuts the acidity of the 🍅 • 1 small carrot 🥕 grated fine
• fresh Rosemary • good quality extra virgin olive oil • white wine
• smoked sea salt
• pepper ( I love to used green peppercorn)
• approximately 1 tbsp butter

Quarter tomatoes, peel garlic, add to a sheet pan drizzling generously with extra virgin olive oil - roast at 400 degrees for about 20-25 mins.
Let cool.
Roughly blend the tomatoes with food processor or hand blender. Set aside.
In a saucepan coat the bottom with more olive oil and sauté diced onions until translucent and golden - deglaze pan with a few splashes of white wine.
Add the tomato sauce in plus a few loose sprigs of fresh rosemary and grated carrot ( adds sweetness). Season with smoked salt and pepper to taste. Simmer on low for a half hour to 45mins
Remove from heat and let cool - give it time to rest. I like to make my sauce early in the day so the flavours have time to blend.
Now, this last part was taught to me by my kids nonna and it's a must --> heat sauce and before serving swirl the butter into the sauce. This gives the sauce a nice creamy taste. Delicious with gnocchi ❤️ Note --> you can increase the smokey flavour by adding a pinch of chipotle powder or smoked paprika.
